  1. Cut pork into three large sections and brown in the bottom of a pressure cooker with 2 TB oil. Add chopped onion garlic and salsa, cook on low to medium for forty minutes under presure. Chop potato into 1/2 inch squares and microwave for 8 minutes or until tender. Chop lettuce and set aside. After forty minutes turn off pressure cooker and let cool enough to drop pressure so you can open. Pull apart pork and let soak in the warm juices. Fry potato on high in remaining oil, adding salt and pepper to desired taste. Warm tortillas on a stove burner low to medium for 10-15 seconds each side. Layer ingredients in tortilla and top with cheese.

You can freeze remaining meat mixture in portions for later use or for overnight camping.
